While visiting the Turks and Caicos, you’ll be spoiled for choice when it comes to dining options—both in terms of flavors and cuisines. On the fine dining end of the scale, Indigo Restaurant located at the Wymara Resort is an ideal option that specializes in elevated seafood dishes.

The name ‘Indigo’ was inspired by the Caribbean region's deep blue seas and rich flavors. The restaurant aims to provide patrons with a memorable dining experience using fresh, locally sourced ingredients as well as cooking methods native to the Caribbean. Indigo also happens to be the first name of Executive Chef and Culinary Director Andrew Mirosch’s daughter.

Chef Mirosch—a commercial fisherman himself—uses his knowledge from and experience in the culinary sector of his native Australia to create a unique coupling of global gastronomic influence with island tastes.

The Menu

The restaurant offers an elegant setting.

Unsurprisingly, seafood is at the core of Indigo’s menu offerings, with items such as coconut curry mahi-mahi, local blackened grouper, and lobster prepared a variety of ways during the local open season. These can be paired with a glass or bottle of one of the many fine wines on offer at Indigo, originating from countries such as Australia, Italy, Spain, the United States, and New Zealand, providing an ideal accompaniment to your meal.

On the sweeter side of things, Indigo also serves a number of tasty, freshly-made desserts, including Caribbean key lime cheesecake, deconstructed banoffee pie, and Callebaut chocolate lava cake. A number of unique specials are also prepared daily in limited quantities.

For those with dietary restrictions or an interest in health and wellness, Indigo also offers an extensive wellness menu. It features a wide range of gluten-free, vegan, and vegetarian options that include baby yellow and purple beetroot topped with grilled goat cheese and drizzled with an orange chili caramel dressing, breaded cauliflower steak, and lightly-curried roasted pumpkin and coconut soup. As a family-friendly restaurant, Indigo also offers a children’s menu.

A Unique and Elegant Ambiance

When in season, local spiny lobster is typically on the menu.

A charming and elegant hotel, Wymara Resort is located on the Bight Beach on the central north coast of Providenciales and to the west of Grace Bay Beach. Framed by crystal-clear waters, Indigo meals are best followed by a leisurely stroll on the Bight Beach.

Wymara’s location is easy to get to by taxi or rental car, with onsite parking readily available. As with most fine dining establishments on Providenciales, making a reservation beforehand is recommended to ensure availability.
