The restaurant is located in a coconut grove that was planted by Sunshine Nursery, which is the oldest botanical nursery and garden centre in the Turks and Caicos. For nearly 30 years, the nursery has been raising coconut, Bismarck, royal, sabal palms, as well as a wide selection of imported and endemic trees and plants. The palms in the grove where the restaurant is located was initially raised for transplant at resorts and luxury homes, yet part of the site was left and eventually commandeered for its current use.
Coco Bistro is also one of the few restaurants in the Turks and Caicos to launch their own cookbook!
Beautiful by Flavour Coco Bistro is hardbound, and is a guide to creating many of their dinner and dessert favourites. The cookbook is available for purchase at the restaurant.
