Le Vele Plaza, Grace Bay Road, Grace Bay, ProvidencialesProvence is a fine dining restaurant inspired by owner Eric Vernice’s French and Italian background and international culinary skills. The upscale establishment is on Grace Bay Road in Providenciales, Turks and Caicos. The restaurant features a blind five-course meal-tasting menu and a selection of French and Italian dishes made with fresh, local ingredients. Local fresh seafood adds to the richness of the men. The Chef’s Table experience offers the option to dine around an open kitchen and see the chefs up close in action.
Owner Eric Vernice is the head chef at Provence. He was born in Roanne, France, where he first learned culinary skills. He went on to work at and head Michelin-starred restaurants in France, Canada, and the Dominican Republic before landing in Turks and Caicos. Chef Eric opened Crust Bakery, which highlights Artisan-style French patisseries. Crust Bakery provides a wholesale service to Turks and Caicos, and their bread and pastries are in many local supermarkets and restaurants.
Chef Eric opened Provence in 2017 to pay homage to his French and Italian ancestry and offer delicious cuisine that fuses creativity and local flavors with respect for traditional French cuisine.
Menu
Provence serves French and Italian cuisine with fresh produce and seasonal ingredients. The availability of dishes is subject to change. Still, you can expect premium ingredients, rich sauces and seasoning, and plenty of options. Appetizers may include Caicos lobster and yellowfin tartare, Chef Eric’s version of melon and prosciutto, beef tartare, and hand-rolled ravioli.
The menu at Provence is inspired by fresh local seafood, with appetizers such as Caicos crab salad, flash-grilled yellowfin tuna, and ceviche. The main dishes include steak, braised pork, duck, organic roasted chicken, grilled grouper, Caicos lobster, and roasted branzino. The hand-rolled butternut squash ravioli with goat cheese is an option for vegetarians.
The dessert selection can vary, with some dessert menu items including chocolate mousse, pistachio cannoli, panna cotta, Grand Marnier creme brulee, macaroons, and molten chocolate cake. Provence also offers special cakes and desserts to celebrate birthdays and anniversaries for a truly memorable experience.
Premium Experiences
Provence offers the option to do a five-course blind menu tasting. The menu tasting has earned rave reviews from guests, who enjoy the opportunity to try several delectable dishes. Many like to add wine pairing with the menu tasting for a tantalizing dining experience. Some items featured in past tastings include foie gras, lobster with basil mashed potatoes, sea bream with shrimp over risotto, and sous vide beef.
Chef Eric’s restaurant also includes the option to dine at the Chef’s Table. The Chef's Table brings guests up close to Chef Eric and his team. Diners can see their meals being prepared and chat with chefs in an intimate dining experience.
Atmosphere
Provence has an elegant yet relaxed ambiance. The restaurant includes a spacious outdoor patio with 70 seats, 14 seats at the Chef’s Table, and 30 seats in the indoor dining area. The dim lighting and ample outdoor space make the perfect backdrop for romantic and intimate dinners.
